A couple days ago I was letting myself get a little anxious. I hadn't really gained any weight and I thought I had felt the baby move, but you know how you can second guess yourself... So I went online to "what to expect when your expecting" and looked at where I should be and I was comforted. The next day at work, one of the PA's used the tiny ultrasound and was able to see a baby in there and it moving all around. It wasn't very good quality but it was comforting. Last night it was really moving around and I was able to feel that first bump on my hand. I am excited that in a few weeks I will hopefully find out if it is a boy or girl.
As for how I am feeling... tired mostly. It doesn't matter if I sleep really well or not, my energy level depletes fast. And that is hard with a 2 going-on-3-year-old. And to top it all off, he's been SUPER cranky/whiny/rolling on the floor lately. I don't really love this stage. I want my cute, sweet boy back.

savannah
For our yearly girls trip we decided to go someplace warmer. We all agreed on Savannah.
We left early Thursday morning and went to the Columbia, SC Temple for a session, then on to Savannah.
We had a great time and ate a lot of great food. We had a spa day and went to a cooking class, which was AWESOME! I think it was the favorite part of the trip.
Savannah has about 20 something little squares (parks) through out the city and we walked everywhere. It was so pretty.
Here's my favorite quotes from this weekend:

Here's my favorite quotes from this weekend:
- Heather: "If it didn't come out of my mouth, we wouldn't have any memories" (of the crazy things that come out of my mouth)
- Lenette: "Yeah, otherwise I'd be eating Heather right now" (referring to the cookies we got at check in)
- Debbie: "I just check out when I'm driving" (unfortunately for us, she drove us to Savannah)
- Brook: "There's like four pieces out there, go get some." (After a dare to take a bite of the pizza left outside of someone else's hotel room... she totally did and Lenette has the picture!)

eggplant and spinach lasagna
I had been wanting to have lasagna for a while now, but wanted a little healthier version. I made this recipe up tonight and it turned out well so here's the recipe if interested. Adam liked it even though it didn't have any meat.
1 eggplant- peeled, sliced, sprinkled with salt & pepper and olive oil and broiled on both sides until brown
2 shallots- chopped
2 garlic cloves- chopped
3/4 bag fresh spinach
salt & pepper
heat garlic and shallots in olive oil and cook until brown, (not burned) over med-high heat, add spinach and cook until wilted, add salt and pepper and mix well, turn off heat, add 1 jar of tomato sauce (I use Classico tomato and basil)
Ricotta mixture: small container of ricotta, 1 egg, parsley, Parmesan cheese, salt and pepper
-mix together and set aside
I did cook the lasagna noodles and they weren't too soft/mushy.
Layers:
a little sauce to cover the bottom
noodles
ricotta mixture
mozzarella cheese
eggplant
sauce & spinach mixture
repeat once more ending with the layer of sauce on top (I don't like dry, crunchy noodles) and a sprinkle of Parmesan cheese.
Bake @ 375 degrees for about 30-40 minutes.
almost 16 weeks
I had an OB appointment today. Adam came with me this time. Everything is going great so far.
It always cracks me up that no one realizes how tall Adam is when he is sitting down. As we were leaving, Adam stood up and my Dr. (who is my height) then asks how big Blake was when he was born and was surprised when I told him 7lbs 1 oz. I guess when you are married to an ogre, we are expected to have ogre-sized babies... LOL!
